In this installment of the Coffee Science series, Starbucks coffee master and educator Lincoln Bechard breaks down the fundamentals behind freshness, including how to store coffee properly and why grinding just before brewing can make a noticeable difference in every cup.
How should you store coffee beans?
Short answer: Keep coffee airtight and away from light, said Bechard.
Air, light and heat are the biggest factors that degrade coffee over time. As soon as beans are exposed to oxygen, they begin to lose the compounds responsible for aroma and flavor.
“Coffee is at its best when it’s protected from air, light and heat — those are the biggest enemies of freshness,” said Bechard.
That’s why proper storage matters:
- Use an airtight container
- Store in a cool, dark place
- Avoid heat and direct sunlight
Once opened, a bag of coffee typically stays at peak freshness for about one week. After that, the flavor can become more muted and less aromatic.

If you don’t have a grinder at home, pre-ground coffee can still deliver a good cup, but timing matters.
Like whole beans, ground coffee typically stays fresh for about one week after opening when stored properly.
Because ground coffee has more surface area exposed to air, it can lose freshness faster. Airtight storage becomes even more important.
