Coffee Science: How to store coffee beans for freshest flavor at home

Starbucks coffee master and educator Lincoln Bechard explains why ‘airtight and away from light’ is the key to keeping coffee beans taste better longer.

If your coffee ever tastes flat or less aromatic than expected, the issue may not be the beans, it may be how they’re stored or when they’re ground.

In this installment of the Coffee Science series, Starbucks coffee master and educator Lincoln Bechard breaks down the fundamentals behind freshness, including how to store coffee properly and why grinding just before brewing can make a noticeable difference in every cup.

How should you store coffee beans?

Short answer: Keep coffee airtight and away from light, said Bechard.

Air, light and heat are the biggest factors that degrade coffee over time. As soon as beans are exposed to oxygen, they begin to lose the compounds responsible for aroma and flavor.

“Coffee is at its best when it’s protected from air, light and heat — those are the biggest enemies of freshness,” said Bechard.

That’s why proper storage matters:

  • Use an airtight container
  • Store in a cool, dark place
  • Avoid heat and direct sunlight

Once opened, a bag of coffee typically stays at peak freshness for about one week. After that, the flavor can become more muted and less aromatic.

How Starbucks helps preserve freshness

Starbucks coffee bags are designed with a built-in FlavorLock that helps keep coffee fresh by allowing natural gases to escape after roasting while reducing exposure to air that can dull flavor.

To reseal:

  • Press excess air out of the bag
  • Fold and secure

This helps maintain freshness and protect flavor longer after opening.

When should you grind coffee?

Short answer: Ideally, right before you brew.

Grinding coffee releases aroma — and aroma plays a major role in how coffee tastes. Once coffee is ground, those aromatic compounds begin to escape quickly.

“When you grind coffee, you’re unlocking aroma — and that aroma is what creates most of the flavor in your cup,” Bechard said.

Grinding fresh helps:

  • Preserve aroma
  • Maintain flavor complexity
  • Deliver a more vibrant cup

How long does ground coffee stay fresh?

If you don’t have a grinder at home, pre-ground coffee can still deliver a good cup, but timing matters.

Like whole beans, ground coffee typically stays fresh for about one week after opening when stored properly.

Because ground coffee has more surface area exposed to air, it can lose freshness faster. Airtight storage becomes even more important.

Why freshness comes down to small habits

Coffee freshness isn’t about complicated tools — it’s about a few consistent practices:

  • Store beans correctly
  • Use them within a week of opening whole beans or within a day once ground
  • Grind just before brewing when possible

Together, these small steps help preserve the aroma and flavor that define a great cup of coffee.
