How to brew with a Chemex
The Chemex® is a unique glass brewer that produces a refined cup of coffee. Slow pouring and thoughtful technique bring out clarity and aroma.
What you’ll need
- Gooseneck kettle
- Scale
- Chemex® coffee maker
- Chemex® filter
- Tablespoon
- Mug
- 45 grams medium‑fine ground coffee
- Hot water
Water-coffee ratio
- 45 grams (9 tablespoons) medium-ground coffee per 720 grams (24 fluid ounces) of hot water
Directions
- Prepare: Place a Chemex filter in the brewer, making sure to leave the thick three-layered side facing the spout.
- Preheat: Thoroughly wet the filter with hot water to warm the vessel, then discard the water.
- Add coffee: Use 45 grams (about 9 tablespoons) of medium-ground coffee. Tap gently to even out the grounds and set the scale to zero.
- Bloom: Pour a small amount of water to saturate the grounds, waiting 30 seconds to release natural gases.
- Pour: Slowly pour 720 grams (or mL) hot water in pencil-thin stream, spiraling from the center outward.
- Brew: Allow to steep for 4-5 minutes while the coffee drips into the carafe.
- Serve: Remove the filter and swirl the coffee in the carafe and serve!
