Starbucks Launches Mercato Lunch Menu in Seattle
Beginning in August 2017, more than 200 Starbucks stores in the greater Seattle area will offer the new Mercato lunch menu, which features vibrant, hearty grab-and-go salads, sandwiches and sides made fresh daily and donated nightly to Food Lifeline through Starbucks FoodShare.

Mercato is Italian for “marketplace,” a vibrant center of fresh food and ingredients, which provided the inspiration for the Mercato menu. Starbucks chefs created what customers have asked for: a fresh and hearty lunch that is made to satisfy, sustain and meet a variety of dietary lifestyles, from high protein to vegetarian to vegan.
Each menu item has been thoughtfully prepared with handpicked, natural ingredients, including breads and cheeses, vegetables, and grains and greens carefully combined so that every bite is full of flavor. Using Starbucks-developed recipes, the Mercato menu is crafted in a local kitchen and delivered fresh daily to Starbucks stores in the area. Read more about the Mercato menu creation and inspiration.
Vibrant Salads
Za’atar Chicken & Lemon Tahini Salad (high protein, made with chicken raised without antibiotics): Starts with slow cooked chicken with Za’atar spice, layered with cracked freekah, chunky cucumber tzatziki, marinated carrots, and chopped romaine, finished with lemon tahini dressing.
Cauliflower Tabbouleh Side Salad (vegan): Mint, cucumber, tomato, chopped parsley, and riced cauliflower tossed with fresh lemon juice, and laid across a bed of slightly spicy arugula.
Green Goddess Avocado Salad (good source of protein, vegetarian): A bed of fresh baby kale is topped with avocado, a medley of rice and orzo, snap peas and crisp radishes. This salad is served with a lemon wedge and Starbucks version of a Green Goddess dressing that’s bursting with sweet and savory herbs.
Hearty Sandwiches
Herbed Chicken & Fig Spread Sandwich (high protein, made with chicken raised without antibiotics): Roasted herbed chicken breast layered with sweet fig spread, peppery arugula, whole-grain mustard and slightly-sweet ricotta on Ficelle, a thin baguette chosen for its crisp crust and chewy crumb.
Cubano Sandwich (high protein): An elevated Cuban sandwich, thanks to the festive flavors of expertly smoked pork loin and pulled pork, melted Swiss cheese, pickled jalapeño and dijonnaise on hearth-baked flatbread.
Almond Butter, Strawberries & Jam Sandwich (good source of protein, vegetarian): Made with chunky almond butter, luscious strawberry jam and fresh strawberry slices on Bavarian multigrain bread.

Starbucks FoodShare
In King County, there is a food insecurity rate of 12.9 percent, meaning many of our neighbors do not have reliable access to affordable, nutritious food*. Starbucks is committed to being a part of the solution; we are proud that starting in August 2017, surplus food – including items from the Mercato menu – at Seattle Starbucks stores will be donated nightly to Food Lifeline through Starbucks FoodShare.
Starbucks FoodShare is a partnership with Feeding America that donates Starbucks surplus food at the end of the day to a local food bank. Starbucks has set a goal to rescue 100 percent of food available to donate from its more than 8,000 U.S. company-operated stores. Since its launch in summer 2016, Starbucks FoodShare program has donated more than 1.6 million meals in 11 cities in the U.S. By 2020, when the program is fully up to scale, Starbucks expects to donate more than 50 million meals each year.
Mercato Availability
In April 2017, Chicago became the first market to offer the Mercato menu, with unsold, ready-to-eat food donated nightly to the Greater Chicago Food Depository through Starbucks FoodShare program. Starting in August 2017, Starbucks will bring Mercato and the FoodShare program to the greater Seattle area from Marysville to Auburn.
Starbucks plans to expand the Mercato menu to additional stores in Seattle and Chicago over time, as well as other U.S. markets in the future.
